Barbeque chicken crepes

Recipe: Barbecue Chicken Crepes

Serves: 2-4
Prep time: 20min
Cook time: 20min

These are delicious! I am a huge bbq fan, and was a little worried this would not measure up to a good old pulled pork sandwich. But wow! This is just as good. Plus you can use the crepes recipe for other dishes. Enjoy : )

Here is what you'll need:

spatula 
frying pan
a pan or ceramic oven safe dish 
butter
1 tbsp of melted butter
1tbsp of oil or olive oil
2 chicken breast
1 bottle of your favorite bbq sauce - ours is honey : )
3/4 cup of flour
1 1/2 tbsp of sugar
1/4 tsp of salt
2 eggs
1 cup of milk

Directions for crepes:
1. Mix flour, salt, and sugar into one bowl and mix. 
2. In a second bowl place the eggs and beat them.
3. Add melted butter and milk to eggs and mix.
4. Pour bowl with eggs, milk, and melted butter into flour bowl and mix til smooth.
5. Heat stove frying pan to 325-350 Fahrenheit.
6. Place a small amount of butter on pan to ensure the crepe does not stick-repeat for each crepe.
7. Pour batter on pan evenly, and ensure you cover entire pan.
8. When the crepe pulls up at the edge flip, and then remove shortly after.

Makes 5-6 large crepes, or 8-10 small crepes.
For thinning batter, add more milk.

BBQ Chicken direction. -preheat oven to 350-375 Fahrenheit

1. Cut two chicken breast into strips or cubes.
2. Place a small amount of olive oil on pan to ensure chicken will not stick.
3. Place chicken on pan and lather with your bbq sauce.
4. Place chicken into oven for 7-10 minutes.
5. Remove chicken, flip, and re-lather with bbq sauce.
6. Place chicken into oven for 5-7 minutes.
7. Remove chicken and place inside crepe with bbq sauce at you discretion.

MMMMMM! Goooood!

 Tips: Use the crepes for other dishes such as: Crepes, fruit, and cottage cheese. Crepes, berries, and whipped cream. Crepes and Nutella.

Turkey chili

This is an easy turkey chili recipe that provides a lot of meals for your week, and it's light in calories!. My wife and I love making this meal. Men, if you're like me make sure you do not wear white.  Getting tomatoes stains out of your clothes is tough. Hope you enjoy the recipe!

Serves: 6-8
Prep time: 30
Cooking time: 30

What you will need:
1 1/2 teaspoons of olive oil
1 pound of ground turkey
1 onion chopped
2 cups of water
2 cans crushed tomatoes
toucans kidney beans
1 tablespoon garlic minced
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 can of corn
1 bell pepper of your choice. (I prefer red)

Directions:

Place the ground turkey in a saucepan with the chopped onions, minced garlic, and salt and pepper. Brown the turkey and drain any excess fat.

While turkey is being browned mix the other ingredients in a big pot. Allow to simmer with ground turkey for 30 mins.

Tips: If you like your chili spicy, put more cayenne pepper in it. If you like your chili thick simmer longer. Sprinkle cheddar cheese on top of chili and couple with cornbread for a great meal.

Tortilla Soup

Tortilla soup:

Serves: 5-6
Cooking time: 15-20min
Preparing time: 15min

What you will need:
2 cans of great northern beans
2 cans of chicken broth
2 cups of shredded cheese of your choice
1 can of corn-optional
8oz of chunky salsa
1 roasted chicken
1 bag of tortilla chips

Directions:
Pull off chicken from bones and then cut into pieces. Place roasted chicken, salsa, beans, and chicken broth into the pot and heat to simmer for 15 minutes.
Pour tortilla soup into a bowl. Sprinkle with cheese and a few crunched tortilla chips. Enjoy!
